I planted 4 yellow squash plants this year and they have completely taken over my garden! I’m giving away several bags of squash each week. One of my neighbors gave me this recipe, and I thought I’d share it. I have not given it a try yet, as I don’t really like pickled anything, but I thought my readers may be interested.
Combine:
9 cups squash sliced thin
2 cups sliced or diced onion
1 tbsp. salt
Let sit 1 hour, then drain.
In a saucepan:
1 cup vinegar
1/2 cup sliced green pepper
1 3/4 cups sugar
1 tsp. celery seed
1 tsp. mustard seed
Bring to a boil, add squash, return to boil. Cook 3 minutes, covered.
Put in jars, process in boiling water bath 15 minutes.
