Ah, the beloved crockpot. This contraption makes most of my Sunday’s more simple by having dinner waiting when we get home. So I guess it’s a toss up as to which makes my day easier, breakfast or lunch!
32 oz. frozen hash browns
1 lb. ham or sausage cooked/crumbled
1 onion chopped
1 green pepper chopped
1 Tbsp. olive oil
1.5 cups shredded cheese (pick your favorite)
12 eggs
1 cup milk
1/2 tsp. salt
1/2 tsp. pepperSpray crockpot with cooking spray or olive oil. Layer 1/3 hash browns, 1/2 onions, 1/3 pepper, 1/3 cheese. Repeat layers ending with cheese.
Beat eggs, milk and seasonings. Pour over layers. Cover and cook for 8-10 hours on low.
Serves 12…so plan on having leftovers for a day or two if you have a smaller family!
