Pineapple Casserole

Truthfully, when I first saw this and heard that it had pineapple and cheese in it, I thought “YUCK”.   I tried a teeny little spoonful, and then proceeded to have two HUGE helpings.  It’s absolutely delish.   You could serve this as a side dish to a ham dinner, but honestly, I now serve it as a dessert.


2-15oz. chunk pineapple – drained
1 cup white sugar
3/4 cup all purpose flour
2 cups shredded sharp cheddar
25 Ritz crackers, crushed
1/2 cup melted butter

Place drained pineapple in 13X9 (or smaller) baking dish.   In separate bowl mix sugar, flour and cheese.  Pour this mixture over pineapple.   Top with Ritz crumbs.  Pour melted butter over the top.

Bake at 350 fro 30 minutes.
