It’s official, we have a Friday afternoon ritual. Tea in the parlor! (ok, it’s on our sun porch, but still.) Since I haven’t had an opportunity to go grocery shopping, I rummaged around and found what items I had on hand and made some AMAZING chocolate chip scones! (The recipe is at the bottom of this post.)
Even Olivia liked the scones and she’s not big on “new things”. My husband had tea with us….of sorts, see what I mean?
Lindsey and I had mint chocolate tea, and as you can see below, she LOVED it. Olivia drank just plain old regular sweet tea, cold…but she at least drank tea and it was in a cup, so it’s progress!
And here is the official “I shall take no tea” to end our day.
Chocolate Chip Scones:
1 3/4 cups all purpose flour
1/3 cup white sugar
2 tsp. baking powder
1/2 tsp. salt
8 TBSP. butter softened
1/2 cup chocolate chips
3 TBSP. orange juice (or more if needed)
Preheat oven to 400 degrees. Sift sugar, flour, salt and soda together. Mix in butter and orange juice (adding more juice if necessary to make a dough). Mix in chocolate chips.
Place dough on a floured surface and form into a 9 inch circle, approximately 1/2 inch thick. Cut into 12 triangles. Brush tops with butter and sprinkle on a bit of sugar. Bake for 12 minutes.
