Works for Me Wednesday


This week the Works-For-Me-Wednesday theme is our favorite summer recipe. And, as luck would have it, I've been requested to make this particular recipe for a cookout on July 4th. So here is a recipe that works for me all year around. However, if you are diabetic, I'd suggest steering clear of this one!

Macaroni Salad
2 cups uncooked macaroni
1/2 cup sugar
3 Tbsp. vinegar
1 tsp. salt
1 tsp. pepper
1/2 cup yellow mustard
2 cups of mayonnaise
1 can sweetened condensed milk
4 hard boiled eggs chopped
1 small onion chopped

Cook macaroni until desired tenderness. Boil, peel and chop eggs. Combine remaining ingredients and mix well. Add macaroni and eggs. Chill until time to serve (although, it's incredible right after you make it and the macaroni is still warm....).

Wow. I've never seen a macaroni salad recipe with sweetened condensed milk before. That sounds really interesting.

It really is good! It has a very sweet and creamy texture. It kills that twanginess that a lot of mac salads have. Let me know if you try it, and what you think!
